Simple but oh so good!
Works great as both an appetizers and main. We've replaced our taco Fridays with Toast skagen friday!
We tried both with fresh and frozen shrimps and it tastes just as great so we actually buy frozen. If you'd like you can add fish roe but we found chives to give the most flavor.

Shrimp
Lemon
Creme fraiche
Mayo
Dijon mustard
Slices of bread (Toast, Levain, your choice)
Butter
Chives
Salt
pepper
Peel the shrimps
Chop up chives, small pieces
Mix sourcream, mayo, mustard
Take half of the lemon and grate the peel into the mixture as well as juice. We are saving the other half for garnish.
Add about halft of the chives into the mixture
Add salt and pepper after taste
Optional Lightly chop the shrimps. We prefer doing this instead of leaving shrimps whole
Add shrimps to your mixture and taste. See if you want to add anything else, ex. more salt, lemon juice etc..
Add butter to each side of every slice of bread. Top and bottom.
Add a butter to a pan on medium heat and toast each slice of bread in the pan. They should be golden brown.
Time for plating!
First take your toast, 2 on each plate. Then divide up the skagen mixture with shrimp on your toast. Top with chives and some extra pepper. Add a slice of lemon on each plate as garnish as well.
